There is just something about food in “taco” form that will always be A+ in my book. Maybe it’s the easy nature of it—who doesn’t like mini things you can eat with your hands? Or maybe it’s just that it’s a meal that commonly evokes a fun, casual time. Either way, I can’t get enough.
These Greek tacos are a fun spin on the original, and can be easily adapted to suite your tastebuds. I made mine with lamb (very traditionally Greek) that’s been marinated with garlic, olive oil and parsley, but you could swap that out for chicken, steak or even shrimp! Pretty much, these are choose-your-own-adventure. The most important thing when it comes to concocting a taco combination is the mix of textures—you want a chewy protein (in this case, lamb), some crunchy veggies, cheese and a creamy cool topping. With a mix like that, you can’t really go wrong!
-A protein of your choice (I chose marinated lamb from Whole Foods)
-1 pint cherry tomatoes, diced
-1 red onion, diced small
-Feta cheese, crumbled
-1 cucumber, diced
-1 batch of this homemade tzatziki recipe
-Soft pita bread (I found mini pita breads at the store, which ended up being the perfect serving size)
-Salt, pepper & fresh dill, to taste
In a bowl, combine chopped cherry tomatoes, chopped red onion, chopped cucumber, 2 1/2 tablespoons of extra virgin olive oil, salt and pepper. Stir to combine, then set the salsa aside. Cook your protein on the stovetop in a pan coated with a smidge of olive oil until browned. Allow to cool slightly, then cube the meat into small pieces.
Cut pita breads in half so that you’re left with the top and the bottom (If it’s too hard to cut them well, pop them in the microwave for 20-or-so seconds. They’ll puff up and become softer, which will make them easier to cut). Plate the “tacos’ by adding the meat, then topping it with the cucumber and tomato salsa, a heaping tablespoon of the tzatziki sauce and crumbled feta.
These make the perfect weeknight meal (so easy!) or a fun weekend dinner that is fresh and yummy enough to ring in spring. Enjoy!
